Fresh ginger beer, perfect for Tassie's chilly winter....

 This recipe makes approx 2 liters of Ginger beer, but this all just depends on the strength that you prefer. 

The original recipe was to only make one liter but for me it was too over powering, so I found I had to divide it between two bottles and water it down.

Ingredients: (these are all depending on taste, its a drink, so its easy to make it just how you like it, and you wont end up with a disaster!)

1 - 2 medium sized knobs of peeled organic ginger 

Organic Brown Sugar

1 - 2 bottles of Soda water 

Using a Food processor or Themomix put the ginger in, and blend until finely grated, add brown sugar (again to taste - I like mine quite sweet, so I put 1/2 cup but the original recipe was for only a couple of tablespoons). Add the soda water, and blend quickly until all combined, dont blend for too long as the soda water will lose its bubbles. If you like the taste - great, but if you find it too strong you may need that extra bottle of soda water to water it down. 

Drink as is, or strain into bottles and store in the fridge.

You could also add lemon, honey (instead of sugar) or make your own special concoction.
